Article Snippet: This study aimed at investigating the survival characteristics of acid-adapted and nonadapted cells of Bacillus cereus, Escherichia coli O157:H7, Listeria monocytogenes, Salmonella enterica serovar Typhimurium, Shigella flexneri, and Staphylococcus aureus in Korean turbid rice wine (makgeolli) stored at 5 and 25 C. Individually, stationary phase-grown cells of each bacterium were adapted to HCl by preexposing the bacterial cultures to a pH of 5.0 in tryptic soy broth at 37 C for 5 h. Makgeolli samples inoculated with individual bacterial strains were stored at 5 and 25 C, followed by being plated on selective media for enumerating detectable survivors.. As a result, the acid-adapted and nonadapted cells tended to decline gradually in raw and pasteurized makgeolli over the storage period.. Storage at a room temperature led to a significant (p < 0.05) increase in the susceptibility of food-borne pathogenic bacteria to intrinsic hurdles of makgeolli with an alcohol content of 6.0~6.9% and a pH ranging from from 4.1 to 4.6. |
